Tasty Tuesday- Easy "Toss in the leftovers" Creamy Pesto Pasta

So up until now I was trying to find recipes that were really intricate recipes that would, well... impress you. However, last night I was thinking about this kind of  "accidental" recipe I made the other day when we had nothing to make and just dying for it! And I thought maybe you guys might actually enjoy an easier recipe every now and then so here it is and I hope you enjoy it as much as I did.
3 tbls          Oil- any oil you have
2 cups        Penne or whatever Pasta you have in the house=]
3 1/2 cups  Any vegetable you have- I used an onion some mushrooms and some Tomatoes
2 cloves      Garlic
1/2 cup       Pesto Sauce
1/2 cup       Cream- I only used half and half
1/2 cup       Plain Cream Cheese
1/2 cup       Parmesan Cheese or which ever one you have

Put a pot of boiling water on high heat and cook the pasta according to the package directions.

Put the oil and the vegetables over medium-high heat and add the garlic and the vegetables and cook for about 5-7 minutes or until the onions are transparent. Add the pesto until heated through and mixed with the veggies and garlic, about 2 minutes. Next add your cream cheese and cook until the cheese is melted, 3 minutes or so. Add the cream and mix together until it is a thick, creamy texture. Turn the heat down to low, drain the pasta and add it to the sauce and mix well, add cheese and toss once more before serving. Enjoy!
